1/3 cup cacao powder
1/3 cup coconut oil
1 teaspoon vanilla extract
1 tablespoon honey or maple syrup (the real stuff!)
Enough almonds to cover a 20cm x 20cm cake or slice tin (or use whatever nuts you have)
handful of shredded coconut
good pinch of sea salt
Place baking paper in tray and cover the base with almonds and roast in oven for 10 minutes (keep an eye on them, ovens vary and you don't want them to burn!) at 200 degrees
While the nuts are roasting, whisk together the melted coconut oil, cacao powder, honey and vanilla.
Let the nuts cool a bit & roughly chop them, sprinkle with salt and pour over the chocolate sauce. Sprinkle coconut on top and place in freezer to set (15 minutes).
Once it is set, break into pieces and enjoy! (store in freezer).
