Quinoa & Banana Pancakes

3 Eggs

2 Overripe bananas (mashed)

1 cup cooked quinoa

3 tablespoons almond meal

¼ teaspoon gluten free baking powder

½ teaspoon cinnamon

Extra virgin coconut oil (for frying)


Whisk the eggs in a medium size bowl and then add the remaining ingredients and whisk/stir until combined.

Place spoonfuls of the mixture into a frying pan coated in coconut oil on medium heat.

Flip them over to cook on both sides.

Serve with raspberries, chopped pineapple, macadamia nuts, shredded coconut, a dollop of yogurt and drizzle with pure organic maple syrup.
