Warm Buckwheat & Chia Porridge

1 cup of buckwheat (soaked overnight & drained)

3/4 cup of water

3/4 cup milk of your choice

2 tablespons of chia seeds

1 teaspoon of vanilla extract

Honey (optional)


Drain and rinse the buckwheat that has been soaking overnight.

Put the buckwheat and water into a saucepan and bring to a gentle boil.

Simmer buckwheat until water has mostly absorbed.

Add in milk, vanilla, honey (or your sweetener of choice) and chia seeds

Stir through, then remove from heat and let sit for a few minutes until the chia seeds have absorbed the moisture.

Serving ideas: serve with milk kefir, yoghurt, shredded coconut, seeds, nuts or your choice of fruit.
