Buckwheat & Chia Overnight Porridge


Buckwheat & Chia Overnight Porridge

2 cups of organic activated buckwheat kernels (see notes)

1/2 cup of chia seeds

2 cups of milk (coconut, almond, dairy)

1 grated apple

2 teaspoons cinnamon

2 tablespoons of pepita seeds (optional)

1 tablespoon of honey (optional)


Combine everything together in a large bowl and whisk with a fork until well combined (If you're not using activated buckwheat kernels don't forget to soak your buckwheat for at least 2 hours and rinse before adding to the rest of the ingredients).

Cover and place in the fridge overnight.

Top with your favourite fruit or nuts and what is in season - we love blueberries, coconut & fresh mint leaves but you could try anything, banana, honey, nuts or seeds - whatever tickles your fancy!

You can purchase already activated buckwheat kernels, but if you don't have access to them all you need to do is soak your 2 cups of buckwheat kernels in water for a minimum of 2 hours or for up to 8 hours. Once they have finished soaking, give them a really good rinse (they can get a little slimy, but that is perfectly normal!)
*IMPORTANT* If your porridge seems a little dry once it has set over night, you may need to add more milk (up to 1 cup), just stir through and let sit for 5 minutes before serving.
