1/2 cup frozen blueberries

2 tablespoons hot water

1 1/2 cups almond meal

2 eggs

1 teaspoon gluten free baking powder

3 tbs maple syrup (or honey or sweetener of your choice)

coconut oil or butter for frying


Pour the hot water on top of the frozen berries and then either mash them up or pop them into a blender to whiz up.

In a medium bowl, whisk together the mashed blueberries, almond meal, eggs, baking powder & maple syrup.

Heat up a tbs of coconut oil or butter in a non-stick frying pan.

Cook pancakes in batches, about 2 tablespoons of mixture for a large pancake and 1 tablespoon for a small one.

Keep the heat on low/medium and you’ll know it’s time to turn them over when little bubbles start appearing on top.
