400ml can of coconut cream
1 cup of berries (frozen or fresh)
1 cup of water
1 tablespoon of powdered gelatine (we use the brand 'great lakes')
kefir or yogurt
Put the berries and water into a blender (if your using frozen berries, use boiling water).
Give the coconut cream a good shake before opening. Pour half of it into the blender with the berries & water and then blend until smooth. Put the other half into a saucepan on low heat.
Whisk briskly while slowly adding the gelatine into the saucepan. Continue to whisk until the gelatine is completely dissolved.
Remove from the heat and pour the berry mix into the saucepan and whisk to combine.
Pour into jars, ramekins or bowls and refrigerate until set.
Before serving, top with some yogurt, pepitas, cashews, berries and shredded coconut - or whatever takes your fancy
