Baked Orange & Coconut Chicken

zest of 1 whole orange

1 cup orange juice (approx 2 oranges)

1/2 cup coconut cream

1 heaped tablespoon of finely chopped or grated ginger (optional)

A good pinch of Salt & Pepper

1kg chicken drumsticks (you could also use thighs or wings)


Combine the orange zest, orange juice, coconut cream, ginger, salt & pepper in a bowl and stir until combined.

Place the chicken drumsticks in a large baking dish and pour the marinade over the top of them. Cover and leave to marinate in the fridge for at least a couple of hours ( but the longer the better).

When you’re ready to cook the dish, preheat the oven to 180 degrees C.

Bake for approximately 45 minutes (basting occasionally with the juices) until the chicken is cooked through and the skin is crispy and golden.

This dish is delicious served with a side of quinoa or mashed potato & green veggies.
